Mexican Pizza (Sort of)
Taco Bell is the creator of some of the greatest bastardizations of Mexican food. The fucking 7 Layer Burrito? Check. Nachos Bell Grande? Awesome! Their now discontinued Taco Salad? Muy classico. One of my favorite menu items is their longstanding Mexican Pizza.
No doubt an attempt to cater to gringos everywhere who are generally afraid of anything remotely ethnic, Taco Bell’s Mexican Pizza is basically a beef tostada (though I usually substitute my beef for refried beans) with another hard shell tortilla on top of it with additional cheese and tomatoes sprinkled on for good measure. It’s quite good. I experimented with making my own healthy version of the Mexican Pizza and if you want to try it, you’re more than welcome. Here are some of your basic ingredients:
- 2 flour tortillas
- A bunch of shredded cheddar cheese
- Shredded lettuce
- Diced tomatoes
- Hot sauce (My preferences are as follows: Tapatio, Taco Bell hot sauce [from the packets, not the watered down store bought shit], and Frank’s Red Hot)
- 1 can black beans
